New Recipe We All Loved

Found a new recipe to try out on my group and even our very picky one loved it so much she had seconds. Here it is everyone enjoy.

Layered Mexican Casserole

2 pounds ground beef
16 (or 1/2 box) of any stores brand Easy Melt/Velveeta cheese, cubed
1 can cream of mushroom soup
1 can red or green enchilada sauce (I used red for ours last night)
2 tablespoons chili powder
1 bag corn tortillas torn or cut into bite size pieces (about 10 to 15 is all you need)
1 bag (8ozs) shredded mexican blend cheese
1 can black beans fully drained
1 can whole kernel corn fully drained

Heat oven to 400 degrees, get out a 9×13 baking dish (coat with non-stick cooking spray)
Combine cream of mushroom soup, enchilada sauce and cubed cheese and melt and heat to melt cheese (I put mine into a coring ware dish in the microwave for about 4 to 5 minutes stirring a few times to blend)
While cooking the cheese mixture brown the beef with the chili powder and when the cheese and soup mixture are finished melting combine them with the beef mixture. Pour in your drained black beans and corn and stir all together.

Now place half the shredded corn tortillas in the bottom of the baking dish and then put half the shredded cheese over the shredded tortillas and then pour the meat mixture over that. Now finish with the rest of the shredded tortillas and then the remaining cheese and pop in oven at 400 degrees for 20 minutes or until bubbly. Let stand 5 minutes and serve.

Enjoy, we all did and there’s only enough left for me to have a little for lunch everyone loved it so much.
